Crockpot Chicken Marsala

Chicken Marsala is my favorite dish and I have been anxious to give it a whirl myself and clean it up a bit!  It was a success!

INGREDIENTS:
  • 1 Tbsp olive oil
  • 2 Tbsp chopped shallot
  • 2 garlic cloves, chopped
  • 2 Tbsp whole wheat flour
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 6 boneless skinless chicken breasts
  • 8 oz baby bella mushrooms, sliced
  • 3/4 cup Marsala wine (sweet)
  • 3 teaspoons cornstarch
  • (optional) Side of whole wheat cous cous


DIRECTIONS:
  1. Combine olive oil, shallot, and garlic in bottom of crockpot.
  2. In a shallow dish stir together the flour, salt, and pepper.  Pound the chicken to an even thickness and coat it with the flour mixture and add to the crockpot.
  3. Scatter mushrooms over the chicken and add the Marsala.
  4. Cover and cook on LOW for 4 hours or until the chicken is tender.
  5. *To thicken the sauce, turn the crockpot up to HIGH.  Combine the cornstarch with 3 teaspoons of water and stir it into the chicken mixture.  Cover and cook until the sauce has thickened 10-25 minutes.
