The cold weather is here and it's the perfect time for chili! Here is a healthier version using ground turkey and it does NOT skimp on flavor and deliciousness!!!
INGREDIENTS:
INGREDIENTS:
- 1 lb. ground turkey
- 1 tablespoon minced garlic
- 1 tablespoon olive oil
- 1 can black beans
- 1 can kidney beans
- ½ cup diced or crushed tomatoes
- 1-1 1/2 cups broth (Turkey, Chicken, or Vegetable)
- 1 small onion
- 1 red pepper, 1 yellow pepper, and mushrooms – diced or cut into small pieces
- ½ teaspoon garlic powder
- 1 tablespoon chili powder
- 1 teaspoon dried basil
- ½ teaspoon dried oregano
- 1 teaspoon hot sauce (I use Frank’s)
- Salt and pepper
- Shredded cheese of your choice
DIRECTIONS:
- In large skillet brown turkey in minced garlic and olive oil then drain and discard any fat.
- In large skillet sauté onion, peppers, and mushrooms.
- Place all ingredients except for cheese into crockpot.
- Cook for 4 hours on low or for 2 hours on high.
- Top with cheese as desired.
NOTE: You can sauté the veggies and turkey all together if you have a large enough pan, but I prefer doing it in separate pans.
