Turkey Chili

The cold weather is here and it's the perfect time for chili!  Here is a healthier version using ground turkey and it does NOT skimp on flavor and deliciousness!!!

INGREDIENTS:
  • 1 lb. ground turkey
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil
  • 1 can black beans
  • 1 can kidney beans
  • ½ cup diced or crushed tomatoes
  • 1-1 1/2 cups broth (Turkey, Chicken, or Vegetable)
  • 1 small onion
  • 1 red pepper, 1 yellow pepper, and mushrooms – diced or cut into small pieces
  • ½ teaspoon garlic powder
  • 1 tablespoon chili powder
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • 1 teaspoon hot sauce (I use Frank’s)
  • Salt and pepper
  • Shredded cheese of your choice


DIRECTIONS:
  1. In large skillet brown turkey in minced garlic and olive oil then drain and discard any fat.
  2. In large skillet sauté onion, peppers, and mushrooms.
  3. Place all ingredients except for cheese into crockpot.
  4. Cook for 4 hours on low or for 2 hours on high.
  5. Top with cheese as desired.

NOTE:  You can sauté the veggies and turkey all together if you have a large enough pan, but I prefer doing it in separate pans.
