INGREDIENTS:
- 1 Tbsp olive oil
- 2 Tbsp chopped shallot
- 2 garlic cloves, chopped
- 2 Tbsp whole wheat flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 6 boneless skinless chicken breasts
- 8 oz baby bella mushrooms, sliced
- 3/4 cup Marsala wine (sweet)
- 3 teaspoons cornstarch
- (optional) Side of whole wheat cous cous
DIRECTIONS:
- Combine olive oil, shallot, and garlic in bottom of crockpot.
- In a shallow dish stir together the flour, salt, and pepper. Pound the chicken to an even thickness and coat it with the flour mixture and add to the crockpot.
- Scatter mushrooms over the chicken and add the Marsala.
- Cover and cook on LOW for 4 hours or until the chicken is tender.
- *To thicken the sauce, turn the crockpot up to HIGH. Combine the cornstarch with 3 teaspoons of water and stir it into the chicken mixture. Cover and cook until the sauce has thickened 10-25 minutes.

ReplyDeleteHi! It all depends on the size/thickness of the chicken breasts you use. I sometimes get the larger ones from Costco or GE has the smaller ones. So for this particular recipe I used 6 larger/thicker breasts which means it could be about 8-9 servings given the larger size of chicken breasts I used. The recommended portion size for chicken is approx. 3-4 ounces, which is about the size of a deck of playing cards. As you can see in the picture, each piece is slightly larger than a deck. Does that help? :)
