I LOVE me some avocados and this is delicious on a whole wheat wrap or just by itself!!!
Ingredients:
- 4 chicken breasts cooked and shredded
- Plain low fat Greek yogurt
- Green onions sliced
- Cilantro chopped thin
- 1 avocado mashed
- Salt and pepper
- Lime juice
Directions:
There were no specific measurements with this
recipe so I just added a little until I got the consistency and taste that I
wanted.
- Scoop out avocado into bowl and mash with fork
- Add Greek yogurt and stir until creamy (REMEMBER: you can always add more, you can't subtract what you put in!)
- Add chopped green onions, just enough to give it some flavor
- Chop up a handful of cilantro and mix in
- Add splash of lime juice and some salt and pepper
- Mix together well and gave it a taste test
- Add more salt and pepper to taste if necessary
- Cover and put in the fridge if not eating right away
NOTE: Because avocados tend to turn brownish after awhile, just keep stirring and add some lemon or lime juice to freshen it up!
