Clean Eating Avocado Chicken Salad


I LOVE me some avocados and this is delicious on a whole wheat wrap or just by itself!!!

Ingredients:
  • 4 chicken breasts cooked and shredded
  • Plain low fat Greek yogurt
  • Green onions sliced
  • Cilantro chopped thin
  • 1 avocado mashed
  • Salt and pepper
  •  Lime juice

Directions:
There were no specific measurements with this recipe so I just added a little until I got the consistency and taste that I wanted.  
  1. Scoop out avocado into bowl and mash with fork
  2. Add Greek yogurt and stir until creamy (REMEMBER: you can always add more, you can't subtract what you put in!)
  3. Add chopped green onions, just enough to give it some flavor  
  4. Chop up a handful of cilantro and mix in
  5. Add splash of lime juice and some salt and pepper  
  6. Mix together well and gave it a taste test  
  7. Add more salt and pepper to taste if necessary
  8. Cover and put in the fridge if not eating right away 

NOTE:  Because avocados tend to turn brownish after awhile, just keep stirring and add some lemon or lime juice to freshen it up!
