This recipe is one of my favorites!! It is super easy and very very tasty! This recipe makes a good amount and the leftovers are just as good! In the picture, one side has low fat Mozzarella and Feta cheese, and the other side doesn't.

MIX TOGETHER:
- 6 tbsp. Greek Yogurt
- 2 cups of mushrooms, peppers, and onions
- (I sauté them first)
- 1- 16 ounce jar of salsa
- 2 cups of brown rice
- 1/2 lb. of chicken, cooked and diced
DIRECTIONS:
I pre-cook the chicken in the oven and then shred it. Then I sauté all of the vegetables and cook the brown rice. Combine all ingredients. Pam 13x9 pan and bake at 350 for 25-35 minutes.

*You can also add other ingredients such
as: low fat cheddar cheese, corn, black beans, diced chiles, or jalapenos.
*I serve this with whole wheat taco chips crunched over my serving topped with some avocado or guacamole.
